In kindergarten they craft lanterns and walk behind rider dressed like St. Martin of Tours. Everywhere around are different traditions: eating geese (because Martin did not want to become a bishop and hid in a geese stable where he was found because of the geese's chattering), children walking around and singing for money (kind of European Halloween) and thousands of lanterns. And there's the story of the cloak which is acted everywhere: When Martin met a beggar he cut his cloak into half and gave one part to the beggar.
There are so many different Martin's pastries it is hard to decide which to make.
Yesterday I invited a friend for a special St. Martin's dinner, I will only post the "typical" dishes, if you want to see the starter's, which are not typical for this holiday just have a look on my German blog.

Martini Seitan Loaf stuffed with roast chestnut filling accompanied by Red Cabbage, Dumplings and Gravy
how to:
Martini Seitan Loaf
prepare seitan loaf from 1kg flour, use a small round item to create a hole
(seitan: wash out and steam)
filling:
200g roast chestnuts, minced
1/2 boskoop apple, minced
1 clove of garlic, minced
1/2 onion, minced
2 small slices of almond nut tofu, cubed (other tofus will do just fine)
1 slice toast, crumbed
a bit of plant cream (I used almond cream)
salt, pepper, mugword
1.
roast chestnuts (don't forget to cut into their shell!)

prepare filling from all the ingredients, deglaze with plant cream, stuff seitan roast
Seitan roast
grease roast, stuff with filling, rest of filling is meant to be positioned around the roast, add some water and bake at 200° for 15 min, then spread red wine or/and port wine over it bake for another 15min eventually use more wine
in the meantime prepare potato dumplings, filled with roasted toast cubes (mine didn't work so I had to use convenience bread dumplings instead) and roast red cabbage, add some apple slices (boskoop).

Weckmann (small St. Martin), Goose, Stollen Cake, Martini Pretzel
all of these are prepared from sweet yeast dough, garnished with almonds and citron or rock sugar (pretzel)
traditionally Weckmänner are split to remember St. Martin's cloak sharing
